Turkey Meatball Marsala Ingredients
Ground turkey - 1lb
Leek (chopped) - 1 cup
Reduced fat 2% milk - 1/2 cup
Water - 1 cup
Raisin - 2 tbsp
Grated lemon rind - 1/2 tsp
Dried thyme - 1/4 tsp
Corn starch - 1 tbsp
Garlic (minced) - 1 clove
Olive oil - 2 tsp
Breadcrumbs - 2 tbsp
Green onions (chopped) - 2 tbsp
Sweet marsala wine - 1/2 cup
Salt - 1/2 tsp
Black pepper - 1/4 tsp
Cooked linguine - 3 cups (6 oz)
Cooking Instructions
- Combine breadcrumbs, ground turkey , green onion, 1 tsp marsala wine, 1/4 tsp salt, black pepper, garlic, and shape in to 1 inch sized meat balls
- Combine the remaining marsala wine with corn starch, 1/4 tsp salt
- Heat oil in non-stick cooking pan on medium-high heat and cook the meatballs for about 8 to 10 minutes until cooked
- Remove from pan and set aside
- Sautee leek for 3 minutes, and add water, 2% milk, raisins, lemon rind, and dried thyme - bring to a boil
- Add the marsala / starch mixture to the leek mixture and cook for about 5 minutes until sauce slightly thickens
- Add in the meatballs and cook for another 3 minutes, and serve over linguine
