Pork Tenderloin Mango Salsa Ingredients
Pork tenderloins with fat trimmed- 2 (1 pound)
Large mangoes (peeled and diced) - 2
Green onions (diced) - 3 tbsp
Fresh ginger (grated) - 2 tsp
Orange rind - 1 tsp
Salt - 1 tsp
Ground black pepper - 1/2 tsp
Fresh orange juice - 3 tbsp
Ground coriander - 1/2 tsp
Olive oil - 1 tbsp
Cooking Instructions
- Cut each tenderloin crosswise into 8 pieces, and pound into even thickness using a meat mallet
- Sprinkle salt and pepper evenly on the pork pieces
- Combine mango with orange rind, orange juice, green onions, ginger, and coriander
- Heat oil in a pan to medium-high heat
- Cook each side of the pork for 3 minutes until done
- Serve the pork with the mango salsa
