Pork Tenderloin with Cherry Port Sauce Ingredients
Pork tenderloin with fat trimmed - 1.5 lbs
Port or other sweet red wine - 2/3 cup
Dried tart cherries - 3/4 cup
All purpose flour - 3 tbsp
Shallots (finely chopped) - 2 tbsp
Fat free chicken broth - 1 cup
Ground coriander - 1/2 tsp
Salt - 1/4 tsp
Black pepper - 1/4 tsp
Butter - 1 tbsp
Cooking Instructions
- Microwave the port for 20 second, then combine with cherries
- Let stand for 10 minutes and drain the cherries from the port
- Combine flour, coriander, salt and black pepper
- Dredge the pork in this mixture
- Melt butter in a pan on medium-high heat
- Cook the pork for 3 minutes on each side until browned
- Remove the pork, and add in the port
- Now add in cherries and shallots, constantly stirring, and cook for 3 minutes
- Add in chicken broth and bring to a simmer
- Return the pork to the pan, and cook partially covered for about 10 minutes
- Remove the cover and cook for another 12 to 15 minutes until cooked
- Cut into slices and serve with the sauce
