Pork Meatball Ingredients
Lean ground pork - 1.25lbs
Zucchini (shredded) - 8 oz
Dry breadcrumbs - 1/3 cup
Fresh parsley (chopped) - 1 tbsp
Fresh oregano (chopped) - 1 tbsp
Ground allspice - 1/2 tsp
Salt - 1 tsp
Grated lemon rind - 1 tsp
Chili powder - 1/2 tsp
Ground black pepper - 1/2 tsp
Garlic (minced) - 2 cloves
Sauce ingredients:
Canned tomatoes - 2 cans (16 oz)
Onion (chopped) - 1.5 cups
Carrot (chopped) - 1 cup
Dry red wine - 1/2 cup
Salt - 1/2 tsp
Black pepper - 1/2 tsp
Garlic (minced) - 2 cloves
Fresh parsley (chopped) - 1 tbsp
Fresh oregano (chopped) - 1 tbsp
Cooking Instructions
- Mix the zucchini with 1 tsp of salt for 30 minutes, then squeeze the water from the zucchini
- Combine it with breadcrumbs, parsley, oregano, lemon rind, allspice, chili powder, black pepper, ground pork, and garlic
- Shape this mixture into 1 inch sized pork meatballs
- Heat a skillet with cooking spray on medium high heat
- Cook the meat balls for 5 to 6 minutes until cooked
- In a sauce pan, add onion and carrot - cook until soft
- Add in the 2 cans of tomatoes (drain the liquid from 1 can), red wine, salt, and black pepper. Cook for 5 minutes.
- Puree the tomato mixture, and simmer in the sauce pan for 20 to 25 minutes
- Add the meat balls to the sauce and cooking for another 5 minutes
