- Black bean (rinsed and drained) - 15oz
- Salsa - 8 oz
- Cilantro (chopped) - 1/2 cup
- Chipotle chile powder - 1/2 tsp
- Minced garlic - 1 tbsp
- Water - 2 cups
- Olive oil - 1 tbsp
Salsa Bean Soup Recipe Cooking Instructions
- Heat olive oil on mediu high
- Add in garlic and saute for 30seconds
- Add water, salsa, beans, and chipotle chile powder
- Bring to a boil and then reduce heat
- Let it simmer for 2 minutes
- Take 3 cups of the mixture and blend it until smooth, then return to the pot
- Simmer for another 10 minutes
- Add in the cilantro and remove from heat
