Green lentils - 1 cup
Olive oil - 2 tbsp
Red onion - 1 (chopped)
Garlic - 3 cloves (minced)
Tomatoes - 3 (chopped)
Cucumber - 1 cup (chopped)
Ground cumin and ginger - 1 tsp each
Paprika - 1/2 tsp
Cayenne pepper - a pinch
Parsley - 1/2 (chopped)
Lemon juice - 2 tbsp
Salt and pepper - add to taste
Feta cheese - 125g (crumbled)

Boil some water in a large pot.
Cooking the lentils until they're soft.

In a frying pan, heat olive oil
to medium, and add in the garlic. Then add in the
onion and cook for about 5 minutes until soft.

Add in tomatoes, cucumber, cumin,
ginger, paprika, and cayenne. Cook for 3 minutes.

Add parsley and lentils, and add
salt, pepper, lemon juice, and cook for another
2 minutes. Garnish with feta cheese.
