This seafood recipe is not only healthy,
it's also low in fat. It contains less than 4grams
of fat, and only 0.5grams of saturated fat. You can
serve this fish recipe for supper, or serve your guests
with it.
White Fish Cutlets
White fish cutlets - 4 (100-150g each)
Fish stock or dry white wine for poaching - 2/3 cup
Bay leaf - 1
Black pepper - 1 teaspoon
Chopped tomatoes - 2 to 3
Minced garlic - 1 teaspoon
Salt - 1.5 teaspoons
Black olives 12 - 14

Cook the chopped tomatoes, garlic, olives,
salt, pepper in a pot on medium-high heat for 10 to 15
minutes. This is the sauce.

Put the fish in a frying pan, and add
in the stock or wine. Add in the bay leaf with lemon grind.
Let this simmer for about 10 minutes until the fish is
cooked.

Place the fish in a plate, and strain
the stock into the tomato sauce. Reduce this a little,
and pour on top of the fish. Garnish with parsley.
This fish recipe serves four people.
You can further lower the fat in this seafood recipe
by using less olives, and removing the skin from the
fish. A
